My wife's looking into converting part of our home into a commercial kitchen, and today she hit a brick wall with county dept of health cause we're on a septic tank. In effect, we'd need a second septic tank with some $15K additional equipment. Kind of a bummer, it's effectively a dead end for now.

Anyone have experience moving from cottage license to a commercial kitchen on your own property, or find an economical next step that isn't outfitting a commercial property with $30K in equipment for a $2K/month lease?
